1 can tomato
puree
1 can crushed tomatoes
6 lbs ground round
2 cups onion; minced
1 cup hot chile powder
1/4 cup dried oregano
1 can canned kidney beans; drained
2 tsp kosher salt; to taste
2 Tbs pepper; to taste
2 cups cheddar cheese; grated
8 ounces sour cream
4 cups sweet onion; minced
Combine beef
and onions in a stockpot, over a moderate flame heat and stir for
15-20 minutes until browned. Stir in remaining ingredients and bring
to a boil. Reduce heat and simmer for 2 hours.
Serve hot, garnished
with grated cheddar cheese, sour cream, and minced sweet onions.
