Teriyaki Meatloaf

2 lbs lean ground beef
2 eggs; lightly beaten
1/2 cup bread crumbs
1/2 cup green bell pepper; chopped
1 large onion; chopped
2 carrots; grated
2 cloves garlic; crushed
2 Tbs soy sauce
2 Tbs brown sugar
2 Tbs lemon juice
2 Tbs fresh parsley; chopped
3/4 tsp ground ginger
1/2 cup brown sugar
1/2 cup soy sauce

Combine all but last 2 ingredients. Form into 1 or 2 loaves and place in a 9x9 inch baking dish. Bake at 350F for 30 minutes. Remove from oven and drain off grease.

Mix together the brown sugar and soy sauce and pour over meat. Bake for 30 more minutes and remove meat to serving platter. Pour sauce over sliced meat loaf or serve separately.
